Collagen Chia Pudding

This is one of my favorite things to prep for healthy breakfasts, snacks and desserts! It’s easy, filling, and delicious and has been especially wonderful for me in the postpartum/new mom season of life I’m in.

ingredients

1 can full fat coconut milk (shake and/or stir thoroughly)
1 cup almond or oat milk (add a bit extra for a thinner consistency as this one is thicck)
4 scoops unflavored collagen (I love Ancient Nutrition’s Multi Collagen Protein and it adds 36mg of protein)
8 tbsp chia seeds
2 tbsp pure maple syrup
1 tsp vanilla extract


what to do

Mix thoroughly to disperse the chia seeds and reduce clumping from your coconut milk and collagen, then store covered in the fridge for a few hours or overnight. Top with all kinds of delicious things like berries, granola, coconut and cacao nibs!
